Marsk Lamb from Danish Crown was on the menu when 140 guests sat down to celebrate the christening of the new baby prince in Møgeltønder in southern Jutland.
We composed a menu largely based on local ingredients, and one of the main dishes was medium rare back and leg of Marsk Lamb with ratatouille, chanterelles and cold potatoes, says F&B Manager John Amstrup from the inn Schackenborg Slotskro. Meat from the Schackenborg beef herd, which is part of HRH Prince Joachim’s production, was also served at the christening. Schackenborg beef is sold as part of the ‘Mad Med Mere’ butcher’s chain and distributed by Danish Crown’s subsidiary Friland.
